Rajma Masala (Red Beans Curry) recipe:

Below is a simple and easy to follow recipe of Indian Rajma Masala:

Ingredients:
  • Red beans
  • Two medium onions
  • Three medium tomatoes
  • Ginger and garlic
  • Green chillies
  • Oil
  • Cumin seeds
  • Butter
  • Dried fenugreek leaves
  • Spices (Garam masala, turmeric powder, dry mango powder)
  • Salt
  • Butter or cream
  • Some coriander leaves

Soak the red beans in water overnight or 8-10 hours. They'll become soft and easy to cook the other day.
Pressure cook the red beans for about 15-20 minutes or about 8-10 whistles.

Meanwhile chop the onions and tomatoes.


After the red beans have been properly cooked, keep them aside.

Now, in a cooker put oil and heat it. After it's heated up, put cumin seeds in it. Let them crackle. Now put the chopped onions in the cooker.

Put some chopped ginger and garlic with the onions. You can also put chopped green chillies to it (It will give a distinct flavor to it without making it hot)

After the onions turn golden brown put the chopped tomatoes and green chillies

When it's cooked properly it looks somewhat like this (Slightly mushy and starts to secrete oil)

Put all the spices one by one and mix it properly. Sauté the mixture for few minutes.
Now put the cooked red beans with the water in the cooker and mix it well.

You can add cream or butter to make it creamy.

Let the mixture simmer for few minutes so that the gravy becomes thick and absorbs all the flavors.

Also, mash some red beans so that it helps the gravy become more consistent and creamy. Be careful not to mash everything up.

After few minutes of simmering put chopped coriander leaves to the curry.

I like to eat red beans with rice, but it goes well with roti too.

Indian Egg plant (Baigan) bharta recipe:

Below is a simple and easy to follow recipe of Indian Baigan Bharta:

U first apply a bit of oil to the egg plant and put it to roast on a stove

Roasting on the stove or fire gives it a distinct smoky flavor (This is the only step I wasn't able to take a pic)

In the mean while, start cutting onions

After onions, chop a tomato



Keep in mind to periodically rotate the egg plant so that it is cooked properly throughout

When the egg plant is cooked it will somewhat look like this (the liquid underneath is the mixture of oil and water that it secretes, which you can either throw it or use it in the dish)

Now cut it in half and start taking out the skin of the roasted egg plant


Now keep it aside (We'll use it later)

In a pan put oil and heat it. After it's heated up, put cumin seeds in it. Let them crackle. (Cumin seeds are optional)

Now put the chopped onions in the pan (I didn't have a pan so I used a cooker instead)

Put some chopped ginger with the onions. You can also put chopped green chillies to it (It will give a distinct flavor to it without making it hot)

After the onions turn golden brown put the chopped tomatoes and green chillies

When it's cooked properly it looks somewhat like this (Slightly mushy and starts to secrete oil)

Put some salt as per your taste and mix it well. Now it's time to put the cut egg plant to the mixture

Sauté the mixture for few minutes. Let the egg plant soak all the aroma.

After few minutes, the mixture looks somewhat like this

Remember to taste it in order to determine it's saltiness (If less then add more, and if more then you are doomed :))

Now it's almost ready. Sprinkle some garam masala (Indian spice), this is optional. Mix it well and garnish it with chopped cilantro leaves (Dhania leaves)

As you can see I didn't have any cilantro leaves, but its highly recommended.

You can enjoy this Indian delicacy with bread (chapati/roti) or even naan.
